"The menu featured a variety of Tex-Mex specialties. Leiter and Manuela ordered fajitas for two. The recommended that Bond try either the fajitas or the enchiladas. He chose the latter. As an appetizer, they shared a bowl of chile con queso - a hot cheese dip made from cheddar and American cheeses, red peppers, and roasted tomatoes. When the food arrived, Bond could hardly believe his eyes. It is said that everything is big in Texas, and that certainly applied to the food portions. The enormous enchiladas were hand-rolled corn tortillas stuffed with ground sirloin and topped with the restaurants special Tex-Mex sauce - a red chile sauce with chili meat - and then with melted cheese. On the side were refried pinto beans cooked with garlic and onions. The Mexican rice was mildly flavored with onions and tomatoes.

"We arrived at the house just as the sky was beginning to pale. Jose's mother opened the door warily to our knock, but appeared delighted when she saw me and quickly pulled us both inside. Through sign language, I managed to ask her if we could use the small upstairs room again, and when she disappeared into the kitchen, I rushed upstairs and went straight to the bed.The relief was extraordinary: there it was, the Delco radio, wedged into the corner under the bed where I'd left it. I went back to downstairs with a lighter heart. Jose's mother emerged from the kitchen a few minutes later with the inevitable bowls of fish stew, beans and rice. We ate them watching dawn break over the port. I felt the excitement flood back into my veins. It was the 4th of October."

12 medium-sized potatoes in ½ inch slices
4 onions sliced
4 ripe tomatoes, peeled and deseed, diced
2 lb mix of different kinds of fish
2 green peppers sliced
1 cup white wine
1 bunch fresh parsley or cilantro, half of it chopped
One bay leaf
Olive oil and salt to taste
1 dried chili pepper (optional)

"I don't know", James answered. He put food in his mouth and thought about it at the same time when biting tasteless mush. He tried to ate as much as possible to get the energy for the run, but food was as lousy as usual. "He shaved and dressed - slacks, a white sea island cotton shirt, soft espadrilles and blazer - in his usual time, then went through the small living room into the tiny kitchen where he carefully cooked his normal breakfast, or near enough his normal breakfast - the best meal of the day, and the most important he always considered.

The coffee was not his much beloved De Bry brewed in an American Chemex, but it was near enough and brewed in an earthenware jug. He had managed to lay his hands on Cooper's Vintage Marmalade, wholewheat bread for his toast and eggs very similar to the ones from French Marans hens. Unhappily there was none of the deep yellow Jersey butter, but he found the local variety very much to his taste.

He took his time over the two cups of coffee, the egg boiled for exactly three and one third minutes and his slices of toast."

"Charmian had roasted a chicken for lunch and they ate it with steamed carrots, potatoes and spring greens, freshly picked, firm and brightly coloured. James savoured every single mouthful. After the muck at Eton, it was like eating the food of the gods.

‘Do you know anything about a boy called Alfie Kelly?’ James asked as Aunt Charmian brought a big apple pie to the table.

‘Dreadful business,’ said his aunt, cutting into the pie and releasing a delicious cloud of steam that smelt of apples and sugar and cinnamon."

"She led Bond back through the busy market until they came to an outlying area that featured a few fresh sushi restaurants in rows of one-storey barrack-like buildings.

"Let's have a sushi breakfast," she suggested.

They went into the narrow place, which was about ten feet wide, and sat at the counter with several workers, still clad in rubber boots. Bond ordered several pieces of tuna, salmon and fish roe for them to share, along with a tekka-maki, a tuna roll wrapped in seaweed cut into six portions, and a kappa-maki, a roll stuffed with cucumber. Bond ordered extra wasabi to mix with the soy sauce, as he was not fond of raw fish. But he was willing to give it a go."

Ingredients:

- 5 eggplants
- 1/2 pound ground lamb or beef
- 1/2 tablespoon tomato paste
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- Olive oil for brushing


How to do it:

Peel the eggplants striped. Soak in salty water for 10 minutes.
Meanwhile, combine ground lamb with tomato paste, red pepper flakes, black pepper and salt (and optional spices). Mix thoroughly.
Use a paper towel to dry the eggplants. Cut them into 1 inch thick pieces.
Take a piece of meat mixture and roll within your palms, press lightly. Pay attention to divide the meat mixture evenly to obtain as many meatballs as the number of eggplant intervals. Set them aside.
Take a skewer. First soak in water for a few minutes, then oil them slightly so that they're not burned and the meat does not stick. Place one eggplant on the skewer, followed by one meatball, and continue this sequence until close to the tip of the skewer. Finally brush the eggplants and meats with olive oil.

"She took the tray that had contained a fine Japanese meal consisting of a prawn sushi and an egg roll with crab meat appetisers, sweet-simmered whitebait in soy sauce, boiled shrimp with fish roe, a piece of fried chicken in ginger starch sauce, miso soup, Japanese pickles and steamed rice. She left another bottle of Ginjo sake, his third but not last, and cleared away the empty. It was a slightly sweet sake that came from the Kyoto Prefecture and Bond thought it did nicely as an after dinner drink. He had to admit that the service aboard Japan Airlines was in keeping with the first-class attention to detail that all things seemed to receive in Japan. The twelve-hour flight would be a pleasant one."

They both ordered bowls of fresh udon, thick white noodles made from kneaded wheat flour. They were served in a hot broth mixed with fried soybean curd and spices such as red pepper that they could shake into the bowl according to taste. Bond found it delicious and ordered two cans of cold Kirin beer to go with the meal."
